Title: Kahlua White Chocolate Swirl Cheesecake

Yield: 6 Servings

Crust:

1 1/2 c graham cracker crumbs 1/4 c sugar 5 Tbsp melted Butter

Filling:

2 lb cream cheese, room temperature 1/2 c powdered sugar 3 eggs 1 tsp vanilla 1/2 c kahlua 2 Tbsp cocoa powder 3 oz white chocolate 2 Tbsp butter

Mix crust ingredients together and press into the bottom and up 1/3rd of the sides of a springform pan. Bake at 350 degrees for 10 minutes. Set aside to cool.

Mix together the cream cheese, sugar, eggs, and vanilla. Remove one cup of batter and set aside in a small mixing bowl. Add Kahlua and cocoa to remaining batter. Melt white chocolate and butter in a double boiler and mix in with reserved cup of batter. Pour Kahlua mixture into crust, then pour white chocolate mixture evenly over the top. Pull a knife through the batter to swirl. Bake at 325 degrees for 1 hour to 1 hour and 10 minutes, until center is set. Cool completely before refrigerating, and refrigerate 12 hours before serving.
